Kupala’s Garden is heavily invested in the concept of edible and sustainable landscapes. The purpose of this workshop is to come together as a community and design the structures, micro-ecosystems, guilds, and aesthetic of the community edible food forest. Details coming soon!

Edible Food Foraging Workshop


Wild Chicory is fully of surprises. It’s woody stocks and common nature make it easy to overlook when foraging. Almost every part of the plant though is edible and make for a varied and delicious plant. This day, we harvested the tender new growth and the flowers to add bulk and a floral flavor to a wild greens salad. The roots though can also be toasted and eaten alone or brewed into a toasty drink.
The end of summer doesn’t mean harvests need to slow down! In the balkans, the beginning of fall means cooler weather with cycles of rain and warm weather. This is the perfect recipe for water loving greens and mushrooms to have one last bolt before winter. Greens that suffer in the heat and become bitter become hearty and flavorful! Seen above is a variety of woodland and grassland edibles including Nettle, Dandelion greens, Chicory flowers and sprouts, and seasonal mushrooms.
